Rempapa – Heartwarming Heritage Specials

CNY 2024 Restaurant - Rempapa

As the Year of the Dragon unfurls its wings, Rempapa introduces a menu with heartwarming flavours steeped in tradition. Chef Damian D’Silva, inspired by cherished Chinese New Year memories, curates a menu available from 3 to 24 February 2024 that not only tantalises the taste buds but also embodies the spirit of familial joy and abundance.

Begin your Chinese New Year feast with the Hoisin Braised Duck Croquette (S$18) — a crowd-pleasing crunchy reunion delight symbolising reunion and plenitude. Battered taro encases tender duck leg, slow-braised in hoisin sauce, and complemented by water chestnuts and winter melon. Each bite is a flavorful journey into the heart of Chinese New Year traditions.

At the heart of the feast lies the Herbal Chicken in Lotus Leaf (S$48) — a sumptuous centrepiece embodying fortune and prosperity. Whole GG French Poulet chicken, cooked with conpoy and baby lotus roots, is enveloped in fragrant lotus leaves. Nourishing herbs and Shaoxing wine add a comforting complexity, inviting good fortune and well-being.

Meanwhile, you can also dive into prosperity with the Teochew-Style Steamed Red Grouper (S$68) — a celebratory hallmark resting in a flavorful chicken stock. The auspicious red colour of the fish heralds luck, success, and vitality, while the dish pays homage to the tradition of abundance and surplus during the Chinese New Year.

There’s also the Cantonese classic Stir-Fried King (S$18.80), which you can savour, aptly named for its sumptuous showcase of diverse tastes and textures. Aromatic garlic chives, sea prawns, jumbo dried shrimp, conpoy, pickled celtuce, and cashew nuts unite in a wok, symbolising long-lasting wealth and wishes for joy in the coming year.

Indulge in the sweet finale of Fluffy Mandarin Orange Steamed Kueh (S$6.80 for 6 pieces) — a traditional treat vibrant with the zest of mandarin orange. Rising as they steam, these airy rice cakes signify growth and heights of prosperity.
