The Latte You Eat with a Fork: Baristart and Queic’s S$14 Cheesecake Runs Till 11 October

Your usual morning latte now comes in a version you eat with a fork. Since Monday, 28 September, Baristart Coffee and Queic by Olivia have been selling The Latte Cheesecake at all seven of their Singapore outlets: three Baristart cafés and four Queic shops.

That gives coffee people and cheesecake people about two weeks to find out what happens when a Hokkaido café hands its espresso to a Basque cheesecake specialist.

Meet the Two Brands Behind It

If Baristart hasn’t made it onto your café-hopping list yet, here’s the short version. The café was founded in Hokkaido in 2015 to celebrate the region’s famous dairy, and it opened its first Singapore outlet in 2019. Its whole identity rests on the milk. Baristart uses Hokkaido BIEI Jersey Milk exclusively, and regulars know it for its cream puffs and Hokkaido milk soft serve as much as for its coffee.

Dessert collaborations aren’t new territory for Baristart, either. Its Singapore outlets have teamed up with Australian gelato brand Messina before, on gelato-stuffed cream puffs and a Macadamia Crunch Affogato. This time, the café is lending out its coffee instead of its pastry case.

Queic by Olivia calls itself Singapore’s first cheesecake boutique concept. It grew out of the award-winning Olivia Restaurant to give that kitchen’s Basque-style cheesecake a shop of its own. If you’ve never had Basque burnt cheesecake, picture a crustless cake baked hot enough to caramelise the top almost black while the centre stays soft and custardy.

The shop’s signature is a blue cheese cheesecake, which tells you plenty about how adventurous it is with flavours. One more piece of trivia: “queic” is roughly how “cake” might be spelt phonetically in Spanish. Obed Thio, spokesperson for Baristart Coffee Singapore, says the café wanted to push past a token coffee flavour. “We wanted our coffee to be more than a flavour note in this collaboration,” he said, calling the cake Baristart’s way of bringing its coffee “into a format our patrons haven’t tried from us before.”

Four Layers, One Latte

The cake is built from the bottom up:

Queic’s Head Pastry Chef, Pablo Ruggero, is the person who turned all of that into a single slice, and he clearly didn’t want to make another tiramisu. “Coffee and dessert are a familiar pairing, so the challenge for us was not to fall into the usual clichés,” he said. He describes the praline as “almost reminiscent of dark chocolate”, while the cheesecake brings “a softer sweetness”. The mousse, in his words, “reminds us of that first sip of a latte in the morning.”

We haven’t tasted it yet, but on paper the praline is the layer to watch, because it’s where Baristart’s beans do the heavy lifting. Going by the chef’s description, the idea is a darker, chocolatey coffee layer set against a mild, creamy cheesecake, with the mousse on top meant to make it read as a latte rather than a plain espresso cake. Whether that keeps it from tasting like a kopi-flavoured sponge (kopi being the local word for coffee) is something only your first forkful will settle.

Queic Loves a Limited Run

Queic’s recent launches show how often its menu changes:

  • December 2025: a fig cheesecake with Blue Bottle Coffee
  • Until 8 August 2026: a lemon cream cheesecake from the same Blue Bottle partnership
  • July 2026: an ube collection

That’s a new special almost every month, which is why the two-week window matters. Neither brand has said The Latte Cheesecake will come back after 11 October, so if a coffee cheesecake sounds like your thing, don’t count on a second chance.

You’re paying a small premium for a slice that combines two brands’ work and is only on sale for 14 days. Whether that’s worth it depends on how much you like coffee desserts.

Our advice:

  • Going solo or as a pair? Start with a slice. Buy it at a Baristart café and order a latte made with that Hokkaido milk, so you can compare the drink and the dessert side by side.
  • Feeding five or more? Get the whole cake. At S$68 it costs S$2 less than five separate slices, so it’s the better deal for a birthday or an office pantry.
  • Either way: Both sizes are sold in-store only, at those nett prices, while stocks last.

Where to Get It Before It’s Gone

The outlets are spread across the island, and some of them pair up neatly:

  • Chinatown and Tanjong Pagar: Baristart’s Tras Street and Keong Saik cafés are a short walk from Queic’s Kreta Ayer flagship. This is the best area to try both shops in one trip.
  • Orchard: Baristart at Wisma Atria and Queic at Scotts Square.
  • West: Queic at Jem.
  • Late evenings: Queic at Jewel Changi Airport and Baristart at Tras Street both stay open till 10pm every day.
  • After work? Skip Keong Saik, which closes at 6pm.
