Shin Katsu Brings Hirata Farm Pork to Tanjong Pagar, with 1-for-1 Mondays Till December

Until the end of December, every Monday comes with a 1-for-1 deal on one of them, which makes the start of the week the cheapest time to try this pork.

The restaurant calls itself Singapore’s first and only tonkatsu restaurant to serve Hirata Farm pork, according to its press announcement sent on 20 October 2026. That claim comes from Shin Katsu. For diners, the more useful facts are the two new sets, their prices and that Monday deal.

Meet the Pig Behind the Katsu

Sangenton is a Japanese term for pork from a three-breed cross. The release describes Hirata Farm’s version as having a fine texture, rich marbling and delicate, melt-in-the-mouth fat, which is what a good tonkatsu fan looks for when the knife goes through.

According to the release, Hirata Farm’s farming history goes back to 1953. Its pigs are raised for up to 240 days on what the release calls a carefully managed, plant-based diet, which the restaurant says produces tender, juicy meat.

Back then, we wrote about Ma Maison’s head chef opening his own tonkatsu spot, and the menu already rotated through imported pork cuts. Hirata Farm is the newest addition to that line-up.

Rosu or Hire? Choose Your Cut

There are two new sets, and the release lists them like this:

Rosu is the loin, the cut with a strip of fat along its edge, and that fat is where Sangenton’s reputation for melting is meant to show. Hire (pronounced “hee-reh”) is the tenderloin, which is leaner and softer. You order hire when you want tenderness without much richness.

According to the release, both sets use Chef Matsubayashi’s signature technique, with a light, crispy panko coating that keeps the pork’s juices inside.

Mondays Are the Smart Booking

To mark the launch, Shin Katsu is running 1-for-1 Hirata Rosu Katsu Sets every Monday from November to December 2026. The deal covers only the Rosu set.

Our pick is easy. If you’re going with a friend, book a Monday and both order the Rosu, so two sets cost S$36.80 between you. The loin also carries the fat that the release keeps praising, so the discounted cut is the best way to judge whether Hirata Farm pork lives up to its write-up. Leave the Hire for a later visit, or for the friend who always cuts the fat off anyway.

Shin Katsu’s earlier pork options were premium too. A Monday deal like this is a rare chance to try a new imported cut at roughly half the usual cost per person, at least until the end of December.
