Eat Your Way Through Earth, Fire, Water and Air at ANTI:DOTE From S$188++

From 4 November 2026, the tables at ANTI:DOTE, the cocktail bar on Level 1 of Fairmont Singapore, turn into projection screens for 4 Elements, a five-course dinner show in which a kingdom at war plays out across your plate. Menus start at S$188++ per person, and shows run on selected dates through April 2027. That window covers a full festive season, Valentine’s Day and probably a few birthdays in your friend group.

The show comes from InterDine, the immersive dining company behind Banquet of Hoshena, and arrives after earlier runs in Hong Kong and Edmonton, Canada. If your group chat keeps circling the same three brunch spots, this is a dinner that comes with an actual plot.

A Kingdom Falls Apart Over Dinner

The story is set in the Kingdom of Hoshena, ruled by Queen Serena, where Earth, Fire, Water and Air have lived in harmony for ages. Then her mischievous sister Nyxara breaks out of imprisonment, the balance shatters, and the four elements start fighting for control of the kingdom.

Each course opens a new chapter, so the projections, animated characters and tabletop effects change the table into a different world every time a plate arrives. You aren’t a passive audience, either. Diners at the Hong Kong run, staged at Hyatt Regency Hong Kong, Tsim Sha Tsui in March 2026, described being asked to “help” finish a dish, with staff guiding them through each step. One Hong Kong attendee rated the night 7.5 out of 10, which is about the most honest score a dinner show can hope for.

Fans of Banquet of Hoshena will recognise the world, because 4 Elements is set in the same universe. The new show is a sequel of sorts, with fewer courses, a bigger cast of elements and a sister with a grudge.

What Lands on the Plate

The five-course menu comes from Nicholas Issel, the Canadian chef who has been Director of Culinary at Fairmont Singapore and Swissôtel The Stamford since November 2025, after more than 20 years in kitchens that include Shangri-La properties in Singapore and Vancouver. He built each course to match a chapter of the story.

Dinner opens with Parmesan and rosemary popcorn, then an amuse-bouche of dried beef, heirloom tomato and Queen olive. Earth follows as a garden of petite vegetables, rainbow roots and greens that the hotel says come from its own rooftop aquaponics farm, finished with heirloom carrot dressing. Fire is Wagyu beef fillet with potato espuma, truffle crunch and ANTI:DOTE’s steak sauce.

A palate cleanser of lemongrass elixir, guava sorbet, lemongrass jelly and drunken plum leads into Water, which pairs roast black cod and Hokkaido scallop with a scallop cracker and XO fried rice. That fried rice is the most Singaporean thing on the menu, and the course that should win over the friend who “doesn’t do fancy dinners”. Air closes the night with a Grand Cru cocoa dessert, almond sablé tart, fruit fluid gel and an Earl Grey chocolate drink, with dry-ice mist rolling across the table somewhere along the way.

Four Cocktails, One on Fire

Adonis Endozo Reyes, ANTI:DOTE’s Head Mixologist, has spent nearly two decades in Singapore’s bar scene, including stints at Origin Bar and the Long Bar at Raffles Hotel. His optional four-cocktail flight costs S$88++ per person and follows the same elements as the food.

Earth mixes Código 1530 tequila, mezcal, cherry and blood orange, while Fire combines Jura 12 whisky, lemon myrtle, Moscato, sage and honey before it’s finished with flames. Water goes smoky with Glenfiddich 12, almond milk, salted apple and peat smoke, and Air lightens things up with cucumber-infused Bacardi white rum, berries, citrus and a topping of edible air. For a show this theatrical, a drink that arrives on fire is pretty much the point!

Which Menu to Book

There are four menus. Classic and Vegetarian cost S$188++, Premium costs S$248++ and adds shaved black truffle and lobster tail, and the Children’s menu costs S$108++ for kids aged six to 12, with free-flow orange or apple juice. Six is the minimum age, so toddlers sit this one out.

Our pick is the Classic with the cocktail flight, which comes to S$276++ a head. You get four drinks that join in on the theatrics, and lobster tail is easier to find elsewhere than a flaming whisky that fits a storyline. Remember that the ++ means service charge and GST go on top, so budget nearly a fifth more than the menu price.

For context on value, Le Petit Chef, a projection dinner in Singapore, has been reported at S$188 for a five-course adult menu. That show runs about 90 minutes and projects a tiny animated chef onto each plate. 4 Elements charges the same entry price for roughly two hours, a whole-table story and hands-on challenges, which makes it the better deal for groups who want something to do between bites.

Timing matters, too. The Sunday 1pm show suits families with kids in tow, while the Friday and Saturday 9pm slots are the obvious call for a date that needs a conversation starter. If your crew usually rotates between premium casual restaurants, this is a step up in spectacle without a dress code headache.
