Pandan, Saffron and Citrus Jelly: the Jakarta Bartender Behind Renaissance’s New Punch Bowls

If you’re plotting a quick escape over the 31 October weekend, four Renaissance Hotels in Bali, Kuala Lumpur, Hoi An and Goa will be pouring punch bowls designed by Jakarta bartender Demitria “Demi” Dana Paramita. None of them is in Singapore, and the woman behind the drinks has spent part of this year shaking cocktails behind Singapore bars.

The drinks belong to Evenings at Renaissance, the hotel brand’s after-dark bar programme. Its new beverage rituals collection debuts during Renaissance Day of Discovery 2026, which Renaissance says runs across participating hotels in Asia Pacific excluding China (APEC) throughout October and November. The idea is that you taste a neighbourhood in a glass before you go out and walk it, which is a far better use of a hotel bar than another overpriced gin and tonic.

A Pastry Chef Runs This Bar

Demi opened HATS Bar in Melawai, South Jakarta, in September 2024, and the venue has a split personality in the best possible way: a gelato shop at the front and a cocktail bar tucked behind it. Nacre Asia’s March 2026 profile called her a trained pastry chef who builds drinks around temperature, texture and contrast, the way you’d plan a dessert course. Her drink Ngopi proves the point by pairing cognac and Kapal Api coffee with a scoop of vanilla and black-olive gelato.

HATS has climbed fast for a bar that’s barely two years old. Asia’s 50 Best Bars placed it at No. 77 on its 2026 extended list and handed it the Campari One To Watch Award. In July, Demi said recognition like this has helped turn Jakarta from a business stopover into a city people fly to for the cocktails. Singapore drinkers have already had a taste, through her guest shift at Offtrack in August and an appearance at Milli’s on 21 September.

Renaissance has made her its first Beverage Rituals Ambassador. Cristiano Rinaldi, Marriott International’s Chief Lodging Product & Services Officer for APEC, said Demi’s “ability to reinterpret familiar ingredients and cultural rituals through a contemporary lens reflects the spirit of Renaissance Hotels.” Handing the humble punch bowl to someone who thinks like a pastry chef is the smartest call in the whole announcement!

Five Punches, One Shared Jelly

Renaissance has named three headline serves. Blooming Flower is described as an interactive floral punch centred on a shared citrus jelly ritual, and it’s the one worth chasing, because jelly in a cocktail is exactly what you’d hope for from a pastry-trained bartender, and the sharing turns a round of drinks into a table activity. The Night Market mixes pandan, calamansi and tamarind, three flavours any Singaporean who has ordered lime juice at a kopitiam (neighbourhood coffee shop) will clock straight away. Silk Road blends tea, saffron and spice, a nod to centuries of flavour trading between cultures.

The collection goes on after the Day of Discovery weekend. According to Renaissance, participating hotels will keep pouring selections as part of Evenings at Renaissance, including Tropical Silk with passion fruit, lychee and tea, and Remedy, a drink inspired by traditional comfort recipes and built around house-made fruit preserves. If Demi’s Jakarta menu is any guide (her Picare turns the flavours of Chinese-Indonesian siomay dumplings into a mezcal drink), those preserves won’t taste like the jam in your fridge.

Where to Pour a Glass

Renaissance Bali Uluwatu Resort & Spa hosts its Day of Discovery from 31 October to 1 November. Days are filled with Navigator-led outings (Navigators are the brand’s in-house neighbourhood guides) and workshops with local artisans. When night falls, there are Punch Bowl Rituals, live music and a traditional gamelan performance.

The draw here is the Punch Bowl Masterclass led by Demi. If you want to learn from the bartender herself, rather than drink a recipe she wrote somewhere else, this is the weekend to book.

Renaissance Kuala Lumpur Hotel & Convention Centre runs its programme over the weekend of 31 October. Guests can join a screen-printing masterclass with local artist Fritilldea, add to a shared artwork and try Peranakan beadwork.

Renaissance Danang Hoi An Resort & Spa runs from 31 October to 1 November, offering silk eco-printing with Gomee Collective, wet-plate portraits with Mot Met Studio and hands-on workshops rooted in the region’s farming heritage. After dark, local artist Minh’s Cowcycle collection goes on display, there’s a traditional rice-pounding performance, and the Silk Road Punch Bowl Ritual is poured.

Renaissance Goa Baga-Arpora Hotel leans into Indo-Portuguese heritage over the weekend of 31 October. The line-up includes Azulejo tile painting, artisan markets selling jewellery, spices and handmade pieces, a Navigator-led walk through the old Fontainhas quarter and dinner in a Portuguese heritage home. Evenings bring live pasta making and the Silk Road Punch Bowl Ritual.

Goa and Hoi An both pour Silk Road, and that pairing makes sense, since both towns grew up on trade routes where spices and tea changed hands for centuries. Saffron and tea taste of that history in a way a generic resort cocktail never could.

Bali for Demi, KL for a Quick Fix

If you can swing only one trip, Bali is the pick, because it’s the sole stop where the masterclass is on the programme and you’ll leave knowing how to build a punch bowl at your next house party. Kuala Lumpur is the easy runner-up for anyone short on leave, as a weekend there needs little planning and the pandan-and-five-spice rituals sound tailor-made for Singaporean palates.

The 31 October weekend falls on Halloween, of course, so you’re choosing between punch bowls abroad and scares at home. If you’re staying put, our guide to Halloween in Singapore 2026 and our breakdown of HHN14’s final nights have you covered.

🗓️ Date: 31 October to 1 November 2026 (Bali and Hoi An); weekend of 31 October 2026 (Kuala Lumpur and Goa)
📍 Location: Renaissance Bali Uluwatu Resort & Spa; Renaissance Kuala Lumpur Hotel & Convention Centre; Renaissance Danang Hoi An Resort & Spa; Renaissance Goa Baga-Arpora Hotel

🎓 Masterclass: Punch Bowl Masterclass led by Demi Dana Paramita, listed at Renaissance Bali Uluwatu
🍋 After the weekend: Selections such as Tropical Silk and Remedy continue at participating hotels as part of Evenings at Renaissance, according to Renaissance Hotels

A hotel bar that sends you out into the neighbourhood rather than keeping you at the pool is rare, and putting a bartender with Demi’s Sumatran roots and pastry chops in charge makes this one worth planning a weekend around. Book a stay at any of the four hotels through the Renaissance Hotels website, and follow Renaissance Hotels on Instagram for news on which hotels keep the collection going into November. Bring a friend, too, since a citrus jelly ritual is no fun on your own!
