If your relationship with CHOYA begins and ends with a glass on the rocks, The CHOYA Ginza BAR Singapore at Millenia Walk has a whole menu of reasons to branch out, with cocktails from S$16+ and food-and-drink pairings at S$28+. The bar officially launched on 30 September 2026, and this is the order to tackle its menu in.
Some context for anyone who only knows the bottle from the supermarket aisle: CHOYA makes umeshu, the liqueur steeped from the Japanese ume fruit, and it has been on retail shelves here since 1998. The bar concept began in Tokyo’s Ginza district in 2019 and reached Hong Kong in 2024. By the brand’s count, that makes this Singapore’s first dedicated CHOYA bar and the concept’s second outpost outside Japan.

A Tokyo Detour on Level 2
Tucked among the restaurants and bars of Millenia Walk, the room is exactly what you want after a long day cosplaying as a Singapore salaryman. The lighting stays dim on purpose, which leaves the bottles and the drinks as the brightest things in sight, so your eyes go where the bar wants them.

The bar and dining areas carry a Japanese classiness that stops short of scaring anyone away, yet it’s polished enough to feel like a short trip to the bars of Tokyo. It’s a compact space too, split between low tables, high tables, and a six-seat counter.
Start With the Highball
Open with the good old classic. The TC Highball (S$18+) mixes The CHOYA Single Year with single malt whiskey, and the CHOYA pierces straight through the whiskey and makes itself known, which sets the mood for everything after it.

Order the Lotus Root Chips (S$8+) alongside. They arrive dusted in nori salt with smoked mayonnaise on the side, and that salt does its job a little too well, because it makes you thirsty enough to down the highball even faster!
Here’s the practical bit for the after-work crowd: the happy hour menu runs from 4pm to 7pm on the days the bar opens, with seven CHOYA cocktails, the TC Highball among them, at S$11.80+ or S$13.80+.
The Pairings Have Rules
The Perfect Pairs are the pièce de résistance. There are six of them at S$28+ per pairing, each a cocktail designed alongside one specific dish and served as a single order, with no swapping the drink out. If anyone has earned the right to tell you what goes with CHOYA, it’s a bar named after the stuff, so follow the rules and you get a party in your mouth.

Start light with the Golden Rod, an original created for the Singapore bar from The CHOYA Single Year, rye whiskey, The CHOYA Nectar, fresh mango juice, and gold leaf powder. It comes with a Hamachi Tropical Ceviche dressed in CHOYA glaze, fresh mango, and pickled mustard seeds, and lovers of both alcohol and raw fish would be crazy to pass on it.
The mango in the glass meshes with the CHOYA Nectar and echoes the mango on the plate, and together they flip the palate after all that salt without filling you up. The food menu lists a Tropical Hamachi Ceviche on its own at S$30+, so getting the fish with a cocktail for S$28+ is the smarter first order.

Fair warning: the Golden Rod sits on the sweeter side. If you don’t like your drinks doubling as sweet treats, the TC Martini (S$20+), which trades the olive for ko-ume, reads far drier on paper. Not a seafood person? The Green Earth pairing, organic matcha with The CHOYA Daichi no Ume next to a Whipped Ricotta Monaka, is the gentler route.
Bring Backup for the Mains
The beef is where eyes get bigger than stomachs, Icarus-style. The menu’s Beef Polpetti (S$25+), built from beef and pancetta with ricotta and tomato fondue, lands as a plate of meatballs far heftier than a ceviche starter prepares you for.

It’s a portion for two friends or one very hungry person, and the way it matches the CHOYA cocktails is what carries you through the plate with glee and perseverance.
That sharing instinct runs through the whole food menu, which climbs from S$8+ snacks to a S$38+ Beef Short Rib Bowl, and it suits the room. It’s easy to picture friends meeting after work, passing plates around, and having a rollicking good time comparing cocktails.

The food was developed locally by the Singapore team, and the cheekiest proof is the Italian Bak Kwa (S$9+), glazed pancetta with honey sriracha crème that borrows its name from bak kwa, the barbecued pork snack. The 4-Cheese Lasagna (S$28+) works ume into the béchamel, which makes it the most intriguing main on the page.
“Most people know CHOYA as a glass of umeshu on the rocks, but there is so much more to discover,” said Edison Ong, Director of Letat Agencies Pte. Ltd., and the plates make that argument as loudly as the glasses do.
What to Order Next
For a first visit on a budget, The CHOYA Flight is the clever buy: five 20ml pours for S$20+, which works out to S$4+ a taste. The three-pour Premium Flight costs S$28+ and pours bottles like The CHOYA French Oak 2016, so save that one for round two.

Twelve labels are sold by the 30ml glass as well, from S$7+ for The CHOYA Golden Ume Fruit to S$15+ for the top three, served straight, on the rocks, with water, or with soda. Non-drinkers aren’t left nursing lemon water, since the TC Sonic, the Golden Rod, and the Green Earth all come in non-alcoholic versions.
Dessert people should circle the C4D, short for CHOYA Cookie Cheese Cake Drink, which blends The CHOYA Kokuto Umeshu with Tiffin liqueur, milk, cream, and cocoa crumbs. It’s paired with a mascarpone and ume salted caramel B&W Cheesewich, and it sounds like pudding you can sip.
