To start, your first (and weakest) option to celebrate with is the humble Moutai Highball, a baijiu twist on the classic cocktail with Kweichow Moutai, cherry-infused Bianco vermouth, and soda. Similar to its scotch and gin siblings, the spirits in this drink are impressively bold, yet also incredibly light on the palate.

Specifically, this highball takes your tastebuds on a journey, starting you off with the subtle, savoury aroma of Moutai. Those complex notes then ease into a pleasantly bitter body, before giving way to the fruity, floral finish of Bianco vermouth that lingers lovingly at the back of your throat.

This cocktail features the more delicate Kweichow Moutai Yingbin, blended with soju and kirsch, and layered with a vibrant mix of pecans, carrots, citrus, and a splash of apple cider vinegar for that extra zing.

And what zing it possesses! Because aside from looking like liquid gold, the 24 Karrot is also exquisite in terms of taste. The sweet-savoury mix of pecans and carrots, paired with the bright acidity of citrus and vinegar, cut through the refined sharpness of the spirits beautifully, bringing balance and depth to every sip.

Baijiu Negroni

Last but not least, the final cocktail in Cat Bite Club’s classy lineup is the strong yet sweet Baijiu Negroni, a crisp concoction of Kweichow Moutai, cacao and Campari, topped with Aperol and grapefruit. Like all negronis, it’s characterised by its distinctive bitterness, one that’s almost overwhelmingly so if you’re new to apéritifs. 

However, unlike most negronis, which balance that harshness with vermouth and gin, this drink sets itself apart by not only utilising cacao for an amazing aroma, but also Moutai for an unmatched umami. That results in a variant that’s far more layered than its cousins, but fair warning: the deadly duo of Campari and baijiu might take you a great leap backwards if you’re not careful.
