Tonkatsu fans, here’s one to look out for. From Chef Matsubayashi Masato, a seasoned tonkatsu specialist and former Head Chef of Ma Maison, comes Shin Katsu – a new tonkatsu dining concept that is set to open its doors on 2 July 2025 at Tanjong Pagar.
Presented in collaboration with The Gourmet Factor, Shin Katsu is Chef Masato’s first independent venture and takes advantage of his global culinary journey across Japan, Spain and Singapore. The restaurant’s menu features globally sourced premium pork cuts, carefully curated by Chef Masato.
Shin Katsu touts a technique-driven approach for its cooking. From its bespoke panko breading method to bring a light but crunchy texture to the exterior, to the signature frying technique that locks in the juices in the meat, as well as the addition of complementary sides like the charcoal-grilled rice for a smoky dimension, the restaurant aims to set itself apart within traditional tonkatsu dining.
What’s on the menu?

A key example of Shin Katsu’s focus on premium ingredients is the Mangalica from Hungary, often regarded as the ‘Kobe beef of pork’ for its marbling and how buttery it is—it will be served in limited quantities daily as a signature offering, something you won’t often see in Singapore’s tonkatsu scene.
You’ll find the cut used in Mangalica Hungarian Rosu Katsu Set (S$42.80), which is a highlight dish of the restaurant.
Another featured cut is the U.S. Kurobuta, which is known for its tender texture and savoury depth. Pick from either the Kurobuta Rosu Katsu Set (pork loin, S$35.80) or the Kurobuta Hire Katsu Set (pork tenderloin, S$36.80), each offering its own distinct flavour profiles and textures.

Meanwhile, Shin Katsu has also included Japanese influences into its menu.
Taking inspiration from the Mille-Feuille, a pastry that is popular in Japan, the restaurant has crafted a uniquely indulgent creation: the Japanese-style Mille-Feuille Katsu. It features delicately layered pork slices and comes in three set variations – Classic (S$30.80), Cheese (S$33.80), and Black Truffle (S$37.80).

But Shin Katsu’s menu has more than just pork. Enjoy other staples like Ebi Fry (S$33.80) and Chicken Katsu; the latter of which is available by itself (S$21.80 for 120 grams, S$24.80 for 160 grams) or as a Katsu Curry option, where it is paired with a rich Japanese curry sauce.
And if you want to have a little of everything, the restaurant also has a 3-in-1 Shin Katsu Combo (S$34.80) that features prawn, Canadian Rosu, and Hire cutlets to enjoy.
