Singapore’s culinary scene is getting seriously creative in order to prove that sustainability doesn’t have to mean boring salads and green juice. Keep reading to find out more!

Look at that gorgeous spread!

First up – FURA! This sustainable bar aims to change the way we eat and drink with its newest menu, Journal of Future Foods, Volume Two. FURA’s food and drinks highlight ingredients that are either in abundance, invasive or prevalent – and they give us a peek into what our diet could look like in the future due to climate change. 

Highlights from the new additions include the 3 Crop Corn, which highlights the benefits of crop diversification for low carbon emissions and supporting regenerative landscapes. It’s inspired by a three-crop farming system. You’ve got a small grain (sorghum grain from the Empirical Soka), a summer legume (corn silk vermouth), and a cover crop (mustard frills from GreenLoopFarms, because even your garnish has a purpose).

Now, I’m sure many of you are curious about what the drinks selection entails, so allow me to enlighten you. FURA’s cocktail game is strong, with options ranging from light and refreshing to spirit-forward, plus sours and dessert-style drinks for those with a sweet tooth. 

Several signature drinks from Volume One are still on the menu – like the Get The Worm, a surprisingly savoury margarita spiked with mealworms, and the bubbly Make Local Tomatoes Great Again. Don’t knock it till you’ve tried it!

That hue itself is so compelling!

Next up, it’s time to go bananas for the planet! To commemorate Earth Hour and Earth Day, MOGĀ is serving up their zero-waste cocktail – Oh Na Na, What’s My Name. And the name is as cheeky as the drink is clever!

This sustainable sipper is made using banana peels – the parts that usually end up in the bin – transformed into something delicious. We’ve got banana peel rum, banana peel-infused Campari, and sweet vermouth all coming together in perfect harmony. And it’s finished off with a dehydrated banana garnish, because no peel gets left behind!

It’s 100% guilt-free, so this is one to toast with if you’re raising a glass to Mother Earth!
