Have a Taste of Thailand with the Phuket Flavourscape Buffet at Grand Copthorne Waterfront Hotel!

If you’ve ever wanted to take your taste buds on a tropical holiday, then the Phuket Flavourscape Buffet at Grand Copthorne Waterfront Hotel Singapore is your boarding pass. In collaboration with the Royal Thai Embassy Singapore, this buffet brings the flavours of Phuket to life from 15 February to 15 April 2025

Crafted by Executive Chef David Toh and Head Chef Witoon Kamonphun of M Social Hotel Phuket’s Beast & Butterflies, the spread is designed to deliver authentic yet approachable Thai cuisine. Being a huge fan of Thai food myself, I knew I had to dive in and sample some of the dishes they had to offer. Keep reading for a taste of my experience!

My Phuket Flavourscape Buffet Experience

When I entered the Food Capital within Grand Copthorne Waterfront HoteI, I didn’t expect to step into such a lively atmosphere – it truly transformed into a Thai haven! With live cooking stations on rotation and a vibrant spread that had my mouth watering, the atmosphere was just as inviting as the dishes. 

Rest assured, you too can expect fresh, made-to-order bites while basking in the bright ambience. Now, without further ado, let’s get into some of the main Thai dishes I tried!

Gaeng Kiew Waan Gai (Green Curry with Chicken)

I knew one of my favourite Thai dishes wouldn’t disappoint me!

I kicked things off with the Gaeng Kiew Waan Gai! This wasn’t the soupy green curry I was expecting – and yet, I absolutely loved it. The slightly thicker consistency made it feel more concentrated and rich, allowing the aromatic herbs and creamy coconut milk to shine even more. And the tender chicken was easy to sink my teeth into – no tough or chewy bits here. 

One small but welcome surprise was the large size of Thai chilli slices, making it easier to pick them out and pop them into my mouth whole (I can’t be the only one who loves doing that, right?). I must say, this was a very fragrant dish as well – I could make out the notes of lemongrass when I searched the roof of my palate for the aftertaste!

Tom Yum Goong

If there’s one thing I always go for – it’s soup. This was invigorating!

From my first sip of the Tom Yum Goong, the sharp tang of lime juice hit me like a truck. It was bright – and so addicting. The balance between sour, spicy, and savoury was spot-on, making each spoonful a fragrant, satisfying experience. If I’m being honest, the soup was so good that I barely noticed the prawns! They were succulent and all, but the soup was where all the flavours were at.

That said, here’s my little PSA: Drink it while it’s hot! I made the mistake of letting it sit too long to indulge in other dishes, and while it was still enjoyable, it lost a bit of its magic. When warm, though, it felt like a comforting hug that whetted my appetite. I was ready to feast to my heart’s content after this!

Pad Thai Goong (Stir-fried Rice Noodles)

Many stations at this buffet allow you to customise certain elements to your liking – which is nice!

Ah, Pad Thai Goong. Always a classic. The chives, tofu, and bean sprouts gave this dish some nice texture, but flavour-wise, this one left me wanting just a bit more oomph. Maybe it was because I had it after the Gaeng Kiew Waan Gai and Tom Yum Goong – both of which were packed with flavour – but my taste buds soon got bored! 

Perhaps a more generous coating of the sweet and tangy tamarind sauce would have helped this dish, as it started feeling too dry after a while. I soon realised this was better as a side dish, and so I did end up pairing it with Gaeng Kiew Waan Gai – which thankfully livened it up!

Khanom Buang (Thai Crispy Pancake)

A miss for me, but a sweet dream for another

Time to talk about the Khanom Buang! But let me preface beforehand – I’m not exactly a dessert kinda gal. The crispy crepe shell was nice, but the filling? Way too sweet for me. I appreciated the shredded fillings adding a little fun texture to the soft interior, but the cloying sweetness meant I couldn’t eat it for long. 

I do think if the crepe was a tad crispier (and less sweet!) this dish could have knocked it out of the park – yes, it had potential – but maybe that’s just me. By the end, I had to gulp down some water to recover. 

That said, I believe those with an extreme case of a sweet tooth have a solid chance of enjoying this!

All in all, while some dishes stood out to me more than others, I’d say the Phuket Flavourscape Buffet delivers quite a vast lineup of authentic flavours. You just need to find what floats your boat. Just pace yourself – so you can save room for the good stuff!
