Heart-Shaped Fondant Potatoes

@crowdedkitchen

Heart-shaped fondant potatoes 🫶 The perfect fancy (but surprisingly easy) side dish to try this Valentine’s Day! Don’t get rid of the potato scraps – chop them up and roast, use in a hash or make mashed potatoes 🥔 Bookmark the RECIPE below 👇 Heart-Shaped Fondant Potatoes (4 servings) Ingredients: 4-5 large Yukon gold potatoes, sliced into 1” rounds Avocado oil (or another high heat oil) Salt and pepper to taste 4-6 tbsp butter (regular or vegan) 8-10 cloves garlic 4-5 sprigs each of rosemary and thyme 1 cup vegetable stock Heart shaped cookie cutter (I linked to ours on our Amazon page, link in bio) Preheat oven to 425˚F. Slice potatoes into 1” thick rounds. Use a small heart cookie cutter to cut out the hearts. Place the potatoes in a bowl of cold water and soak for 15 minutes, then pat completely dry. Meanwhile, heat avocado oil in a skillet over medium-high heat. Reduce heat to medium just before adding in the potatoes. Add in the potatoes and sear for 3-5 minutes on one side, until golden brown and crispy. Season with salt. Flip the potatoes over, season with salt and sear for another 3-5 minutes, until golden brown and crispy. Using tongs and a paper towel, soak up as much of the frying oil as possible (turn off the heat for this step). Return to medium heat and add in butter, garlic, herbs, salt and pepper to taste. Heat the butter until foamy and hot, but do not brown it. Baste the potatoes with butter. Pour in vegetable stock and place in the preheated oven for 15-20 minutes, until completely tender on the interior. Enjoy! #potatoes #valentinesday

One-Pot Creamy Spinach and Sausage Penne

@spoonfulofsi

Creamy spinach & sausage pasta🍝 Recipe below👇 Ingredients 1 tbsp olive oil 1/2 yellow onion, diced 4-5 cloves garlic, minced 15 oz Italian sausage, crumbled  1/2 lb pasta (penne, fusilli, rigatoni, ziti, orecchiette, gemelli, cavateelli, cavatappi) 1 cup chicken broth  1 cup heavy cream  1 tsp Italian seasoning  15 oz can tomato sauce (can also use marinara)  5 oz fresh spinach 1/4 cup Parmesan cheese (+ more for serving)  1/2 tsp salt 1/2 tsp freshly cracked black pepper 1/4 tsp red pepper flakes (optional) Instructions 1. Heat 1 tablespoon of olive oil on medium heat in a large skillet on the stovetop. 2. Add diced onion and cook until soft, about 5 minutes. Add minced garlic and stir until fragrant, about 1 minute (careful not to burn). 3. Add sausage and cook for about 5 minutes, breaking into pieces with a wooden spoon, until cooked through. Drain any grease or liquid. 4. To the same skillet with sausage, add uncooked pasta, chicken broth, heavy cream, Italian seasoning, and tomato sauce. Stir together. 5. Bring to a boil on medium heat. Cover with a lid and cook pasta for 10 to 15 minutes. Stir often to prevent pasta and sausage from sticking to the bottom of the pan. 6. Add ¼ cup parmesan and fresh spinach, stirring for a couple of minutes until spinach wilts. 7. Cook a bit longer for a thicker sauce. Season with salt, freshly ground black pepper, and ¼ tsp red pepper flakes (optional). Mix everything well. Remove from heat. 8. Serve with extra parmesan cheese. #pastarecipe #dinnerideas #mealinspo #valentinesday #valentinesdaydinner #onepotmeals #onepotrecipe #easyrecipe #pennepasta #spinachpasta #sausagepasta #easymeals #easydinner
