Vanilla Mousse Cups
Some of us may not be attached, but who says you can’t still share a little love – even if it’s just with your best friends? With six servings, these creamy Vanilla Mousse Cups are perfect for a Galentine’s celebration. If the upcoming Valentine’s Day has you feeling lonelier by the minute, having some dessert alongside company that’s just as sweet can turn everything around!
Ingredients:
- 5 tbsp unsweetened cocoa powder
- 1 cup and 7 tbsp of granulated sugar
- 3 packets (or approx. 21g) of unflavoured gelatin
- 1 cup and 5 tbsp of whole milk
- 1 cup of cold water
- 1 tsp of vanilla extract
- 1 cup of heavy whipping cream

- Raspberries or toppings of choice (optional)
Directions:
- Whisk 5 tbsp of sugar, the cocoa powder, and one packet of gelatin in a small saucepan.
- Whisk in the cold water and 5 tbsp of milk.
- Place this pan of cocoa mixture over medium heat and bring it to a boil while whisking constantly so the chocolate doesn’t form lumps.
- Remove the pan from the heat and let the chocolate jello sauce cool for about 1 ½ hours until it reaches room temperature.
- While the chocolate jello sauce cools, make the vanilla mousse. In a small saucepan, combine the vanilla extract, 1 cup of milk, and two packets of gelatin and whisk together.
- Place this pan of vanilla mixture over medium heat and continue whisking until it’s steamy (don’t bring it to a boil).
- Let the vanilla mixture cool until warm before continuing to the next step.
- Using an electric mixer, beat your heavy whipping cream in a large mixing bowl for 1 ½-2 minutes on high speed until the whipped cream is fluffy and spreadable.
- In a second mixing bowl, whisk 1 cup and 2 tbsp of sugar with the sour cream until well combined.
- Fold the fluffy whipped cream into the contents of the second mixing bowl.
- Using the mixer on low speed, slowly add the warm vanilla mixture into the second mixing bowl, scraping down the bowl as needed. Mix for another 30 seconds to ensure everything is blended.
- This vanilla mousse sets quickly, so divide it into six serving cups immediately and refrigerate them for at least 30 minutes until it’s mostly set.
- Slowly pour 3-4 tbsp of cooled chocolate jello sauce over each chilled mousse cup.
- Neatly place your raspberries or toppings of choice over the chocolate and refrigerate the mousse cups for 4-5 hours until they’re fully set.
