Wanna take dining to new heights? Say hello to SAMBAROOM. Since opening its doors in September, this new gem has already made waves in Singapore’s nightlife scene. Perched atop a skyscraper and tucked away as the chic upper mezzanine speakeasy of SUSHISAMBA, SAMBAROOM serves more than just panoramic views of the Singapore Straits and the skyline. This swanky spot features exclusive cocktails from the “Taste of SUSHISAMBA” and “Street Art Collection” – signature creations you won’t find elsewhere!
And that’s not all. Elements of Japanese, Brazilian, and Peruvian cultures shine through everything here – from the decor to the menu, to even the entertainment that keeps the night young and alive. If good vibes and even better food are what you’re looking for, you’ve come to the right place. I’m here to share my very own SAMBAROOM experience! The atmosphere is lavish, the cocktails are heavenly, and the food? Well, that’s just the icing on the cake. Drooling already? Here, keep reading to have a taste of what I had!
My SAMBAROOM Menu Highlights

At 52 stories high, little did I know entering SAMBAROOM would feel like walking through a portal into another world. The red furnishings caught my eye instantly, and the lush green walls had me feeling like I was cradled in nature’s embrace, even though I was floating way above the city!
The low lighting bathed the space in an intimate glow, making time slow down. Till my gaze landed on the gilded bar! Sleek, polished, and inviting, it stood out amongst the soft warmth. And before I knew it, my attention was pulled to the menu.
Bahia Colada

The Bahia Colada was the first drink to grace my tongue, and I was off to a strong start! A twist on the classic piña colada, I’d ordered it for the matcha infusion – always a sucker for anything matcha – but the real star turned out to be the coconut! It was a luscious creamy base that made every sip a smooth, tropical escape. There were indeed some earthy matcha notes, but I almost missed them – the coconut really stole the show!
The nice touch of Fernet Hunter Cacao added a slight depth, which balanced well with the botanicals from the Roku Gin. Surprisingly, I didn’t mind the subtle herbal flavour – but I must admit, the drink was just a tad too sweet for my liking. I found myself wishing for a tad less sugar to really let the more nuanced flavours shine through.
The coconut’s richness gave this drink major points, but a little less sweetness would’ve knocked it out of the park. Of course, if you’re one with a sweet tooth craving something indulgent, then this one’s worth a try!

Barranco Sour

Up next – the Barranco Sour. It actually wasn’t as strong as you might expect from a pisco-based drink, so I’d recommend this for an easier sip if you’re trying to pace yourself! The passion fruit was a pop of brightness, lending a sweet tang, but all the flavours leaned on the subtle side. Even the chocolate – one of its more intriguing components – was barely noticeable. And honestly, I wasn’t mad about it. I’m not big on chocolate in drinks, so its muted presence worked in this cocktail’s favour for me.
What I loved was the gentle acidity humming in the background, courtesy of the fresh lime juice. It added just the right amount of zest to balance the passion fruit’s sweetness. Crisp and delicate, the Barranco Sour is a solid choice for a mellow but satisfying drink – but I wouldn’t exactly call it a showstopper. I just personally enjoy a bit more oomph to coat my palate, but it’s great if you’re easing into the night or winding down with something light and fruity!

Geiko

Now this was a cocktail that seemed too intriguing to pass up. Geiko is a vibrant drink that tastes like summer in a glass – a fun choice if you’re in the mood for something refreshing. At first sip, the citrus hit me like a truck, with the guava and apple notes in the passenger seats. Honestly, it reminded me of the apple juice I get on flights (not a bad thing per se), but with a sophisticated twist thanks to the Aperol and a kiss of the floral Mancino Vermouth Sakura.
The punch from the lemon added a lively zing, while the sake brought a layer of umami depth that gave the drink a well-rounded finish. I wouldn’t say this one’s a heavy hitter in terms of complexity either – like the Barranco Sour – but it’s undoubtedly an enjoyable option perfect as a quick pre-dinner starter. I do think a stronger floral hint would have taken it to the next level, but if you’re in the mood for something playful and fruity, Geiko’s the pick for you.

Crispy Cassava

What’s a drink without something to nibble on, right? What stood out as a comforting choice was the Crispy Cassava. It’s a bit on the heavier side – cassava’s naturally quite starchy – so I found it slightly challenging to eat too much at once. But that’s not to say it wasn’t yummy! The golden-brown crispiness of the cassava was spot on, and the sour cream added just the right amount of velvety tang to balance out the dish. What really took it up a notch was the Molho a Campanha and Salsa Verde. The freshness and spice from these salsas gave the dish a flavourful kick, and that’s what had me going back for more!
I might have found it heavy since it was later into the night – but I will say, it was shocking how much more satisfying the Cassava became when paired with the drinks. The mix of textures and tastes worked delightfully together, like a palate cleanser between sips! It’s filling and flavorful, just a little heavy to tackle at once. But a lovely option nonetheless if you’re looking for something hearty to complement your drinks!

Salmon Tiradito

I’ll need you to put your hands together for this one – the Salmon Tiradito! Aka, the best dish of the night. This was my first time trying raw salmon, and let me just say, the bar has been set sky-high. The salmon was unbelievably silky smooth, practically melting in my mouth. And the crispy quinoa? It brought interest with its crunchy texture and held my tastebuds’ attention. The kick of mild heat was also very much welcome – I firmly believe a little spice makes everything better! And with the creaminess of avocado purée and the tanginess of the orange ponzu, this dish somehow managed to be both decadent and refreshing at the same time.
The layers – they worked in perfect harmony. The ponzu, despite my usual reservations about orange, had a light, watery consistency that seeped into the salmon, infusing every bite with flavour. Then the cheeky umami crept up in the aftertaste, a lingering gift from the kizami wasabi. And I can’t leave out the shio kombu – it added a depth that masterfully tied the dish together. You’d think all these flavours would clash (I sure did), but it was all so thoughtfully put together. If you’re heading to SAMBAROOM, you gotta try this. Thank me later!
