Begin your Chinese New Year feast with the Hoisin Braised Duck Croquette (S$18) — a crowd-pleasing crunchy reunion delight symbolising reunion and plenitude. Battered taro encases tender duck leg, slow-braised in hoisin sauce, and complemented by water chestnuts and winter melon. Each bite is a flavorful journey into the heart of Chinese New Year traditions.

At the heart of the feast lies the Herbal Chicken in Lotus Leaf (S$48) — a sumptuous centrepiece embodying fortune and prosperity. Whole GG French Poulet chicken, cooked with conpoy and baby lotus roots, is enveloped in fragrant lotus leaves. Nourishing herbs and Shaoxing wine add a comforting complexity, inviting good fortune and well-being.

Meanwhile, you can also dive into prosperity with the Teochew-Style Steamed Red Grouper (S$68) — a celebratory hallmark resting in a flavorful chicken stock. Experience heights of prosperity with YÀN’s headlining Kaleidoscope of Prosperity Yu Sheng (from S$238 to S$418++), “Shun De” Style, featuring Australian Lobster. Embrace the fortune and abundance of the Year of the Dragon at the vibrant international buffet Oscar’s. From 22 January to 25 February 2024, Oscar’s is set to delight you and your loved ones with an extensive array of culinary treasures, combining Eastern and Western flavours.

Throughout the festivities, guests can revel in a feast featuring seasonal delights from open kitchens and live stations. The Signature Seafood Ice Bar offers fresh seafood, with the Frutti Di Mare as the highlight. If you’ve got the craving for BBQ, the Charcoal Barbecue area has your back! Enjoy meaty treats like the Smoked BBQ Grilled Beef Sirloin and Grilled Sweet Mustard Chicken Thigh as part of a hearty meal.

Ya Ge – Trailblazing Chinese New Year Feast

Ya Ge heralds in the Year of the Dragon with an extraordinary Chinese New Year feast. From 1 January to 24 February 2024, Executive Chef Sam Chong, with over two decades of experience, invites you to indulge in a series of meticulously prepared dishes and delightful takeaway sets, promising a resplendent Chinese New Year celebration.

Ya Ge offers seven set menus (from S$88++ per person to S$1888++ for a table of 10). Each menu features upscale ingredients like Australian lobster, Chilean cod, abalone, bird’s nest, shark’s fin, sea cucumber, French ‘An Xin’ chicken, eel, crab, and yellowtail. The culinary team has curated a menu for every celebration, ensuring a feast fit for royalty.

The plethora of menus features festive staples that bring friends and family together. From the Happiness Set Menu (S$88++ per person) is the Braised Duo Vermicelli with Crab Meat and Crab Roe a reimagination of the classic braised bee hoon that features crab meat, crab roe, and fish roe, creating a medley of sweet, buttery, and umami flavours.

The Longevity Vegetarian Set Menu (S$88++ per person) meanwhile will warm the hearts of your loved ones with the Double-boiled Matsutake Mushroom Soup in Young Coconut, which is slow-cooked with Matsutake mushrooms, dendrobium stem, conpoy, and young coconut, this Cantonese-style soup brings comfort with a harmonious blend of umami, earthiness, and a touch of sweetness from the coconut.

From the Fortune Set Menu (S$138++ per person) is the Crispy Golden Eel and Yellowtail Yusheng — a unique twist on Yu Sheng, featuring dragon-shaped puddings atop crispy eel and yellowtail. Drizzled with passionfruit and kumquat dressing, it promises a modern ‘huat’ way of tossing prosperity. 

Moving on to the Harmony Set Menu (S$588++ for 6 persons), the centrepiece of many family gatherings is Pen Cai, and Ya Ge has concocted their version here with the Ya Ge Prosperity Pen Cai — a masterfully crafted dish filled with 20 premium ingredients, including 10-head abalone, fish maw, sea cucumber, black moss, and more, simmering in a collagen broth.

Ya Ge’s Prosperity Set Menu (S$1088++ for 10 persons) features the festive showstopper Iberico Pork Belly Pagoda with Braised 10-head Abalone — a royal dish with Iberico pork belly fashioned into pagodas, accompanied by preserved mustard and a 10-head abalone, creating a divine symphony of flavours.

Lastly, the Abundance Set Menu (S$1388++ for 10 persons) has the Fiery Maotai Crispy Bone Duck — a visual spectacle featuring duck marinated with Maotai and spices, fried to perfection, and flambéed tableside, embodying the fiery spirit of the dragon.

Ya Ge also embraces the Year of the Dragon with the highly-anticipated Success Set Menu (S$1888++ for 10 persons). The culinary team dreamt up a selection of dishes that will be a meal to remember. The set menu includes exclusive dishes such as Braised 5-head Abalone with Golden Oyster Fortune Bag accompanied with Australian Asparagus, Stewed Hong Kong Noodles with Australian Lobster, Chilled Bird’s Nest in Hawaiian Papaya accompanied with Yuzu Snowskin Mochi and Royal Eight Treasures Gourd-shaped Stuffed Duck. This timeless masterpiece demands careful deboning and stuffing with ten treasures, offering a showstopper that feeds the camera, soul, and palate.

Taking centre stage is Yuè’s Prosperity Yu Sheng, titled “Stirring Up A Bountiful Year” (S$68++ for small, S$108++ for large). It features succulent salmon slices and chunky scallop pieces generously drizzled with passionfruit sauce. Elevate your culinary experience with the Abundance Yu Sheng (S$128++), where juicy baby abalones join the ensemble, symbolising prosperous well-wishes. 

For a sensory feast that embodies luck and unity, indulge in the exquisite Braised 6 Head Abalone, Pork Knuckle, Mushroom, and Black Moss dish, titled “Receiving Blessings This Season” (S$88++ for small, S$168++ for large). Slow-cooked pork infused with rich seasonings, set on a bed of spinach, pays homage to tradition in an elegant culinary presentation.

Guests will also love the decadent pot of double-boiled chicken soup with fish maw, sea whelk, and conpoy, charmingly titled “Lucky Star Upon You” (S$68++). Every ingredient is delicately boiled to perfection, creating a comforting symphony that evokes reminiscence and the warmth of a home-cooked meal with every sip.

The final featured dish in this eclectic menu is the comforting Chinese sausage fried rice with preserved meat and sakura ebi, titled “Five Grains Prosperous New Year” (S$68++), a delightful reimagining of the classic fried rice. A harmonious blend of wok-fried rice with savoury cherry blossom shrimps, finely-diced garnishes, and well-seasoned flavours caters to the taste buds of diners, young and old.
